Mexican food is famous for salsa, no matter which region you are visiting, and fortunately, tomatoes are the main ingredient. Mexican Food Recipe:

Here is a simple and easy Mexican food recipe to try:
Stuffed Picnic Loaf
Ingredients
Plain white bread dough -1/2 a batch
Re-fried beans -2 cups
Red salsa -1 cup
Yellow onion (chopped) -1
Sharp Cheddar cheese (grated) -1/2 cup
Mozzarella or other string type cheese (grated) -1/2 cup
Queso fresca or Ricotta -1/2 cup
Fresh cilantro (chopped) -1/4 cup
Cumin seeds -1 teaspoon
Salt, Fresh ground black pepper -to taste

Method:

  1. Roll out the prepared dough (about ½ inch thick) on a lightly floured surface. Ideally, it should be approximately 6 to 8 inches by 12 to 14 inches.
  2. Place the long edge near you. Spread the beans over the surface of the dough carefully, leaving about a 1-inch border all around it.
  3. Spread the salsa over this and scatter the cheeses, cilantro and cumin.
  4. Season to taste with salt and pepper.
  5. Carefully roll the dough away from you in a jellyroll fashion. Pinch the edge and ends to seal.
  6. Lift the dough gently onto a baking sheet lined with baker's parchment.
  7. Brush the surface with a lightly beaten egg (with 1 tablespoon of cold water).
  8. Make several diagonal slashes along the top of the loaf with a sharp knife and leave it in a warm place to rise.
  9. Preheat the oven to 350° and bake for about 30 minutes or until golden brown.
  10. Remove from the oven and brush the surface with melted butter.
  11. Wrap in a clean towel and serve when cooled slightly.
